Breakfast Egg and Bacon Cups


You'll need...
  • bread 
  • eggs 
  • steamed or fresh veggies of your choice (we used to be those steamer bags from the freezer aisle but you can make your own mix! 
  • bacon (regular or turkey!) 
All you have to do is...
  • Preheat oven to 400 degrees F. 
  • Grease muffin cups with your favorite oil or cooking spray. 
  • Use a cup or cookie cutter to cut circles of bread roughly the size of the muffin cups and place the bread circles in the bottom of each cup. 
  • Line wall of muffin cup with bacon. 
  • Mix steamed or fresh veggies of your choice with eggs (about 1 egg per cup). 
  • Pour egg mix into each cup and then bake for about 15 minutes!

For our Fixers, this works out to be about: 1 yellow, 2 red, 1 green, 1 tsp

You could add cheese (blue container!) but these were kid tested and approved without it!! You could also make a batch of these on the weekend and refrigerate for breakfasts or lunches on the go during the week!
